Finnish Pannukakku

Recipe

Ingredients

  • 4 eggs
  • 2 cups milk
  • 1 cup sugar
  • 1 cup flour
  • 2 tbsp butter
  • 1 tbsp vanilla extract

Directions

  • Preheat oven to 350 degrees.
  • Place butter in 8 1/2" x 11" metal baking pan then place the pan in oven to melt butter.
  • Mix eggs, milk, sugar, flour and vanilla extract together in large mixing bowl until smooth.
  • Remove pan from oven and spread melted butter around in the bottom of the pan.
  • Pour egg mixture into hot pan and place in oven. Bake for 60-70 minutes until crust gets golden brown.
  • Remove from oven and let cool for 10 minutes.
  • Cut into squares and serve with berry jam, syrup, or sugar.
     

Serves 6-8.

"Here's the recipe that I grew up with. "Pannukakku" literally translates into "pancake" and this is a great breakfast meal, but when I was a kid, my mom would sometimes make it for dinner. Or, we enjoyed it after sauna on Saturday night. How Finnish is that, eh?" ~Walt Lindala
